Zucchini Caviar

Zucchini Caviar is a popular cold dish in Russia. It was even more popular in Soviet Union. Keep this cool and serve with toast or rye bread.

Ingredients
  1. 50 ml sunflower oil
  2. 400 g carrots, grated
  3. 100 g onions, roughly chopped
  4. 20 g garlic, roughly chopped
  5. 1 kg zucchini
  6. 1 tbsp tomato paste (optional)
  7. 2 tsp salt
  8. 1 tsp sugar
  9. 1 tsp ground black pepper
  10. 7 ml white vinegar (9% acidity)
Instructions
  1. Heat oil in a large saucepan. Add grated carrots, chopped onions and garlic. Fry for 10 minutes stirring from time to time.
  2. Cut zucchinis in small cubes. Add to the saucepan, reduce the heat and simmer for 40 minutes, stirring from time to time.
  3. Remove from the heat, puree the vegetables using a hand blender.
  4. Stir in the tomato paste (if using), add seasonings and vinegar.
  5. Return to the low heat and simmer for 20 minutes.
  6. Remove from the heat, let it cool. Transfer to a jar. Keep in the fridge.
