Chocolate Cake With Cherries And Hazelnuts

  1. 2 tbsp cocoa powder
  2. 100 g softened butter
  3. 100 g caster sugar
  4. 1 egg
  5. 100 g self-raising flour
  6. 1/2 tsp baking powder
  7. 1 can black cherries, drained
  8. 50 g hazelnuts, roughly chopped
For Chocolate Sauce
  1. 150 ml single cream
  2. 180 g dark chocolate
  3. 1 splash Baileys
  1. Preheat the oven to 180ºC.
  2. Mix the cocoa powder with 4-5 tablespoons of boiling water and stir until the mixture is smooth.
  3. In a large bowl, beat the butter and sugar.
  4. Stir in the cocoa mixture, egg, flour and baking powder.
  5. Pour the batter into an ovenproof dish.
  6. Sprinkle over the cherries and hazelnuts and bake for 25 minutes.
  7. Meanwhile, make a chocolate sauce. Bring cream to a boil, remove from the heat.
  8. Add the chocolate and leave it to melt.
  9. Add a splash of Baileys. Mix well.
  10. Once the cake is ready, pour warm chocolate sauce on top and let to sit for ~10 minutes.
