  1. 180 g puff pastry
  2. 3 medium potatoes, cooked
  3. 100 g cooked turkey breast
  4. 50 g grated cheddar cheese
  5. 1 tsp dried rosemary
  6. salt and pepper to taste
  7. 1 egg yolk to brush
  1. Preheat the oven to 180C.
  2. Line a baking tray with slightly greased parchment.
  3. Slice cooked potatoes and turkey breast.
  4. On a flour dusted silicon baking mat roll the pastry into a sheet 30cm x 27 cm.
  5. Layer half of potato and turkey slices in the middle of the sheet along the longest side.
  6. Leave approx. 10 cm edges empty so you can seal the strudel.
  7. Season with salt, pepper and 1/2 tsp dried rosemary.
  8. Sprinkle over halve of the grated cheese.
  9. Layer the remaining potato and turkey slices.
  10. Season with salt, pepper and 1/2 tsp dried rosemary.
  11. Sprinkle over the remaining cheese.
  12. Fold one side of the dough and then cover with another. Seal the edges.
  13. Make diagonal cuts on top and brush with egg yolk.
  14. Bake for 30 minutes.
