Potato And Cheese Flatbread

This potato and cheese flatbread known as dallan [dɛə`tlɛə:n] in Caucasian cuisine. It’s grilled on a dry pan for a couple of minutes then smeared with a knob of butter.

For Filling
  1. 3 large potatoes
  2. 1 heaped tbsp butter
  3. generous pinch of salt
  4. 150-200 g cheddar cheese
For Dough
  1. 1/2 cup lukewarm water
  2. 1 egg
  3. 1 tsp quick dried yeast
  4. 1 tsp sugar
  5. generous pinch of salt
  6. ~2 cups plain flour
  7. 1 tbsp sunflower oil
  8. butter, to brush
  1. Peel potatoes, cut into wedges and cook until done.
  2. Mash the potatoes, stir in butter and salt. Let to cool down completely.
  3. Meanwhile, make a dough - pour water in a mixing bowl, crack the egg and add the yeast, sugar and salt. Mix well.
  4. Gradually sift the flour and knead an elastic, non-sticky dough.
  5. Add the oil and knead for 2-3 minutes.
  6. Leave in a warm place for ~30 minutes.
  7. Grate the cheese and mix with mashed potatoes. Form 10 large balls and set aside.
  8. Divide the dough in 10 equal parts, roll each part and place the potato-cheese ball in the centre.
  9. Fold the edges, turn over and roll into 0.3 cm thick sheet.
  10. Heat a non-stick pan over low-medium heat. Dry-fry for 2-4 minutes each side.
  11. Place on a plate and brush with the butter. Keep covered with a parchment papercand a kitchen towel while cooking.
