Pecan And Raisins Oat Cookies

When I made those cookies for my friend, he couldn’t believe that I made them by myself because they really look like the ones from a store. So I had to proof him by showing step-by-step pictures of how I cooked them. Anyway, I have to admit I was flattered!

Ingredients
  1. 70 g butter, cubed
  2. 80 g self-raising flour
  3. 50 g porridge oats
  4. 75 g raisins
  5. 20 g Demerara sugar
  6. 1/2 tsp ground mixed spice
  7. 25 g pecans
  8. 1 egg white
Instructions
  1. Preheat the oven to 180C.
  2. Mix together butter and flour.
  3. Stir in oats, raisins, sugar, ground mixed spice, pecans and egg white.
  4. Make 9 balls. Place well spaced apart on a baking parchment and press to flatten slightly.
  5. Bake for 15-20 minutes until golden brown. Transfer to a wire and leave to cool.
