One-Pot Chicken And Vegetable Pasta

Ingredients
  1. 1 tbsp olive oil
  2. 1 chicken breast fillet, cut in bite sized pieces
  3. 120 g pasta
  4. 1 large tomato, skinned and peeled
  5. 1 small green pepper, deseeded and diced
  6. 1 onion, diced
  7. 2 garlic cloves, roughly chopped
  8. 1 tsp chilli flakes
  9. 250 ml chicken or vegetable stock
  10. 1 tbsp cornflour
  11. 1 1/2 tsp salt
  12. 1/2 tsp sugar
  13. 1 bay leaf
  14. 1 tbsp cornflour
Instructions
  1. Add the olive oil in a large saucepan.
  2. Add chicken, pasta, tomato, green pepper, onion, garlic and chilli flakes.
  3. In a separate cup add 250 ml stock, salt and sugar and mix well.
  4. Pour over the saucepan.
  5. Add the bay leaf. Cook over the medium heat for ~10 minutes.
  6. Dissolve 1 tbsp cornflour in 1/2 cup water. Stir in to the saucepan. Cook until pasta is ready.
