Oat And Carrot Pancakes

- 1 cup rolled oats
- 3 eggs
- 1 medium carrot, grated
- 1 tsp baking powder
- 1 tbsp sugar
- 4 heaped tbsp low fat yoghurt
- Place oats in a food processor to make fine oat flour.
- Add the remaining ingredients to the food processor and blitz well. The batter should be the same as for American pancakes.
- Heat a pancake pan over low heat, spray oil in it. Pour the batter to make 4 pancakes. Fry until see bubbles on top, turn over and fry until golden brown.
- Serve with honey or jam.
