Ingredients
  1. 1 cup rolled oats
  2. 3 eggs
  3. 1 medium carrot, grated
  4. 1 tsp baking powder
  5. 1 tbsp sugar
  6. 4 heaped tbsp low fat yoghurt
Instructions
  1. Place oats in a food processor to make fine oat flour.
  2. Add the remaining ingredients to the food processor and blitz well. The batter should be the same as for American pancakes.
  3. Heat a pancake pan over low heat, spray oil in it. Pour the batter to make 4 pancakes. Fry until see bubbles on top, turn over and fry until golden brown.
Notes
  1. Serve with honey or jam.
