  1. 1 large onion (save 1/3 for meatballs)
  2. 1 small carrot
  3. 1 tbsp sunflower oil
  4. 4-5 tbsp tomato passata
  5. 2.5 L vegetable or beef stock
  6. 1 small potato, peeled and cubed
  7. bunch of fresh coriander, chopped
For Meatballs
  1. ~180 g minced meat
  2. 1 egg yolk
  3. 1 tbsp white rice
  4. 1 tsp paprika
  5. salt and pepper to taste
  1. Peel and cut the onion. Save 1/3 of chopped onion for meatballs (chop finely)
  2. Peel and grate the carrot
  3. Heat a saucepan, pour the oil and fry vegetables until soft
  4. Stir in the tomato passata, simmer for 3-4 minutes
  5. Add the stock
  6. In a separate bowl, combine all ingredients for the meatballs
  7. Make the meatballs about 3 cm in diameter and add in the boiling stock
  8. Boil for a few minutes before adding cubed potato
  9. Cook until the potato is done.
  10. Season with salt and pepper. Add chopped fresh coriander.
