Meat Stuffed Peppers In Tomato Sauce

  1. 2 tbsp uncooked rice
  2. sunflower oil
  3. 1 large onion, finely chopped
  4. 3 garlic cloves, crushed
  5. 1 medium carrot, grated
  6. 400 g minced meat
  7. 2 tbsp tomato puree
  8. bunch of fresh coriander
  9. ground coriander
  10. salt & pepper
  11. 6-7 medium or 4-5 large bell peppers
  12. 500 ml tomato sauce
  13. water
  14. salt & pepper
  15. 50 ml cooking cream
  16. 1 heaped tbsp flour
  1. In a small saucepan bring salted water to a boil. Add rice, boil for 5-7 minutes until rice is half cooked. Drain.
  2. Heat the oil in a pan, fry onion, garlic and carrot until soft.
  3. Mix together the rice, fried vegetables and minced meat. Stir in the tomato sauce and chopped fresh coriander. Add the ground coriander and season with salt and pepper.
  4. Wash the pepper cut the top if using small bell peppers or cut in half if using large peppers. Stuff the peppers with the meat and vegetables.
  5. Pour tomato sauce and a ladle of water in a large saucepan, season with salt and pepper.
  6. Add the stuffed peppers. Place over low heat and simmer for ~25 minutes.
  7. Add the cooking cream. Stir the flour in a cup of water. Pour to the pan.
  8. Simmer for another 10-15 minutes. Check and adjust the seasonings.
  9. Sprinkle over chopped coriander. Serve.
