Ingredients
  1. 1 egg
  2. 40 g caster sugar
  3. 75 g plain yoghurt
  4. 60 g melted butter
  5. 1 tsp almond/vanilla extract
  6. pinch of salt
  7. 45 g self-raising flour
  8. 45 g porridge oats
  9. handful of mini marshmallow
For The Icing
  1. 1 egg white
  2. 1 1/5 cup icing sugar
  3. few drops of food colouring
  4. marshmallow to decorate
Instructions
  1. Heat the oven to 180C.
  2. Beat the egg and sugar until fluffy.
  3. Stir in the yoghurt, melted butter, almond/vanilla extract and pinch of salt.
  4. Fold in the flour and oats.
  5. Gently stir in marshmallows.
  6. Fill 3/4 of cupcake mould with a batter.
  7. Bake for ~20 minutes. Remove from the oven and let to cool.
  8. Meanwhile, whisk the egg white.
  9. Stir in the icing sugar and food colouring. Spoon over the cupcakes and sprinkle with marshmallows.
