  1. 500 g lamb
  2. 1 onion
  3. 2 tomatoes
  4. 1 carrot
  5. 2 red peppers
  6. 2 medium potatoes
  7. 3 garlic cloves
  8. 1 tbsp sunflower oil
  9. 1 heaped tsp paprika
  10. 2 tbsp tomato paste
  11. salt and pepper to taste
  12. fresh coriander to garnish
  1. Cut lamb in small pieces, add to a pan with a cup of boiling water and cook for ~20 minutes.
  2. Meanwhile, peel and finely chop the onion.
  3. Make a cross cut on tomatoes, pour over boiling water and leave for a couple of minutes.
  4. Peel tomatoes and roughly chop.
  5. Peel the carrot and cut in sticks, then cut them across into equal-sized diced cuts.
  6. Core the peppers, cut in slices, then cut them across.
  7. Peel potatoes and cut in cubes.
  8. Crush the garlic cloves.
  9. Add onions, tomatoes and carrots to the pan. Stew until onions are soft.
  10. Add peppers, potatoes and crushed garlic.
  11. Stir in tomato paste and add hot water to cover the vegetables and meat. Reduce heat and simmer for ~20 minutes or until vegetables are done.
  12. Season with salt and pepper.
  13. Remove from the heat. Add chopped coriander. Let to rest for 10 minutes.
