Ingredients
  1. 1 egg
  2. 200 ml kefir
  3. 1/4 tsp salt
  4. 2 tbsp caster sugar
  5. 1 cup (130 g) plain flour
  6. 1/4 tsp bicarbonate of soda
  7. 1/2 cup hot water
  8. 1 tbsp sunflower oil + extra for frying
For Blueberry Filling
  1. 3-4 tbsp blueberry jam
  2. 3-4 tbsp cottage cheese
  3. blueberries to decorate
  4. icing sugar to sprinkle
Instructions
  1. In a large bowl mix together egg and kefir.
  2. Add salt and sugar.
  3. Gradually stir in the flour.
  4. Mix soda and 1/2 cup hot water.
  5. Add to the bowl stirring constantly. Leave to rest for 5-10 minutes.
  6. Stir in 1 tbsp sunflower oil.
  7. Heat a pan greased with oil.
  8. Fry pancakes until golden.
  9. Mix together blueberry jam and cottage cheese.
  10. Spread on the pancake. Fold in half. Then fold in half again, making a triangle.
  11. Sprinkle over blueberries and icing sugar.
Notes
  1. Use laban instead of kefir.
