Homemade Paneer Cheese

Paneer is one of my favourite cheeses and since it’s so easy to make it I prefer my own homemade paneer. It’s only two ingredients you would need to make the cheese – full fat milk and lemon juice. You may also use semi-skimmed milk but then cheese will taste differently so that I’d like to stick to full fat. From 0.5l milk you can get about 80-100 g paneer.

When the milk just starts boiling  pour in gently the lemon juice and you should see milk begins curdling. If you don’t then add more lemon juice. This white mass of curdled milk is your paneer.

Strain into the muslin-lined colander and discard the whey. Tie the ends of the muslin loosely above the paneer. Run it under cold water for a minute or so, then squeeze tightly to remove any remaining whey and form into desired shape. Leave in the colander, flatten with a plate and put something heavy on top such as jar with a jam or can of beans for an hour or so to drain as mush whey as possible.

Remove the paneer from the cloth and place on a board, cutting to the desired size before serving.

Ingredients
  1. 500 ml full fat milk
  2. 1 tbsp lemon juice
Instructions
  1. Line colander with a muslin and place in the sink.
  2. Pour the milk into a heavy-based saucepan and simmer over a medium heat ~20 mins.
  3. When the milk just starts boiling, pour in the lemon juice. Stir continuously until the curd and whey are formed.
  4. Strain into the muslin-lined colander and discard the whey.
  5. Tie the ends of the muslin loosely above the paneer. Run it under cold water for a minute or so, then squeeze tightly to remove any remaining whey and form into desired shape.
