Breadcrumbs are very easy to make. I use fresh bread that is about to dry out and since I don’t like wasting food, breadcrumbs are my saviour. They can be stored in a dry place for up to 3 months.
I usually do one portion with salt and pepper and another — with Italian dried herbs.
It is better not to use stale bread as breadcrumbs may have a stale taste.

- Italian dried herbs
- Heat the oven to 100C.
- Cut the bread small pieces of same size. Line a baking tray with a parchment paper. Scatter over the bread pieces and bake for ~10-15 min. Do not let the bread to burn.
- Place the bread pieces in a food processor and grind well. Add salt, pepper and Italian dried herbs.
- Place breadcrumbs in an air-tight container and store up to 3 months.
