  1. 500 g salmon fillet
  2. bunch of fresh parsley
  3. juice and zest of 1 lemon
  4. 2 tbsp mustard
  5. 2 garlic cloves, crushed
  6. salt and pepper to taste
  7. 1 red pepper
  8. 1 onion
  1. Chop the parsley.
  2. Grate lemon zest.
  3. Mix together parsley, 2 tbsp mustard, juice and zest of 1 lemon.
  4. Stir in the garlic and mix well. Season with salt and pepper.
  5. Cut salmon fillet in bite sized pieces.
  6. Cover the salmon with marinade. Set aside for 30 minutes.
  7. Meanwhile, cut the onion and red pepper in cubes.
  8. Heat the oven to 200C.
  9. Thread the salmon piece and onion and pepper cubes onto skewers.
  10. Put skewers on greased baking tray or on top of baking form.
  11. Bake for 10 minutes, then turn over and bake for another 10 minutes.
