Golden Raisin And Walnut Biscotti

I quite often buy biscotti from Costa and one day decided to make them by myself. So here you are, I am presenting my first made biscotti! Actually it was easy than I expected and they taste lovely, better than in Costa 😉 You can store biscotti in an airtight container for 2-3 weeks.

  1. 110 g plain flour
  2. 1 tsp baking powder
  3. 20 g caster sugar
  4. 1 egg
  5. 2 tsp vanilla extract
  6. 1 tbsp melted butter
  7. 15 g walnuts, roughly chopped
  8. 1 small handful (~15 g) golden raisins
  1. Preheat the oven to 160C fan on.
  2. Combine dry ingredients in a bowl.
  3. Stir in the egg, vanilla extract and melted butter. Knead a dough.
  4. Gently stir in the walnuts and raisins.
  5. Transfer the dough on a floured work surface and lightly knead until smooth.
  6. Shape into a log and place on a baking tray lined with a parchment.
  7. Bake for 15-20 minutes, or until a light crust forms to be able to cut without squashing.
  8. Cut into slices about 1 cm thick and continue to bake for 7-10 minutes.
