Ingredients
  1. 500 g chicken fillet
  2. 1 egg
  3. 50 g plain flour
  4. 1/2 tsp salt
  5. pinch of chilli powder
  6. sunflower oil for deep frying
  7. sweet pepper
  8. cherry tomatoes
Instructions
  1. Blend chicken fillet using food processor.
  2. Stir in egg, flour and seasonings.
  3. Make walnut sized balls.
  4. Fill a heavy bottomed saucepan with the oil and set over a medium heat.
  5. Try if the oil is hot enough by placing a small piece of chicken into the saucepan. It should sizzle immediately.
  6. Fry the croquettes in batches for 4-6 minutes. Remove on a paper towel to absorb excess of oil.
  7. Cut the pepper. Thread the pepper, chicken croquettes and tomatoes onto wooden sticks and serve.
