- 2 large tomatoes
- 6-8 pieces mozzarella cheese
- 8-10 leaves basil
- salt and pepper
- drizzle of olive oil
- Place tomatoes into large bowl and pour over a boiling water. Leave for 2 minutes then drain and peel off skin. Cut into 0.7 cm slices.
- Cut mozzarella in 0.7 cm slices.
- Place alternative layers of tomato, mozzarella and basil leaves on a large shallow plate.
- Sprinkle over salt and black pepper. Drizzle olive oil.
