Dry Ingredients
  1. 70 g plain flour
  2. 65 g porridge oats
  3. 80 g brown sugar
  4. 1/2 tsp ground cinnamon
  5. 1/2 tsp baking powder
  6. 1/8 tsp bicarbonate of soda
  7. 1/8 tsp salt

  9. 55 g melted butter
  10. 120 g plain yoghurt
  11. 1 egg
  12. 1/2 tsp vanilla extract
  13. 80 g blueberries
  14. 1 tsp lemon zest
Instructions
  1. Preheat the oven to 200C.
  2. In a mixing bowl, combine dry ingredients.
  3. In a separate bowl mix well the remaining ingredients except blueberries and lemon zest.
  4. Pour over the dry ingredients. Stir well
  5. Gently mix in the blueberries and lemon zest.
  6. Pour the batter in 8 muffin moulds. Sprinkle over a little bit of oats and sugar.
  7. Bake for ~15-20 minutes.
