Ingredients
  1. 4 beef shanks
  2. 1 tbsp sunflower oil
  3. 1 onion, roughly chopped
  4. 2 garlic cloves, roughly chopped
  5. 1/2 Thai chilli, finely chopped
  6. 450 ml beef stock
  7. 3 tomatoes, skinned and roughly chopped
  8. 1 tbsp tomato paste
  9. 3 bay leaves
  10. 1 tsp salt
  11. generous pinch of salt
Instructions
  1. In a saucepan, pour in 600 ml water, bring to a boil. Add the beef shanks. Cook for ~1 hour.
  2. Remove the beef shanks. Reserve the stock.
  3. Heat the oil in a large pan. Fry the beef shanks until brown all over.
  4. Add chopped onions, garlic, chilli and a ladle of stock. Sweat until soft.
  5. Pour in the beef stock, chopped tomatoes, tomato paste, salt and pepper and simmer for 1 1/2 hours.
