Beef Layer
  1. dash of olive oil
  2. 1 medium onion, chopped
  3. 1 small carrot, grated
  4. 5-6 medium button mushrooms, sliced (optional)
  5. ~250-300 g minced beef
  6. salt and pepper to taste
Tomato Sauce
  1. knob of butter
  2. 2 garlic cloves, crushed
  3. 500 ml passata
  4. 1 tsp dried oregano
  5. generous pinch of sugar
  6. salt and pepper to taste
Other Ingredients
  1. lasagne sheets (enough for 3 layers)
  2. 200-250 g mozzarella, sliced
Instructions
  1. In a large saucepan bring water to a boil. Add 1 tbsp salt for every 1 1/2 l water. Add lasagne sheets and cook until done. Remove the lasagne sheets. Reserve the pasta water.
  2. Heat a pan over medium to high heat. Add oil, chopped onion, grated carrot and sliced mushrooms. Add a 2-3 ladles of reserved pasta water and sweat until liquid evaporates.
  3. Reduce the heat. Add the minced beef, 1 tbsp oil and fry until meat is brown all over. Add 1-2 ladles of pasta water, cover with a lid and cook for ~10-15 min. Season with salt and pepper. Remove from the heat.
  4. In a separate saucepan, melt a knob of butter, add crushed garlic and fry for 30 sec. Add passata, dried oregano, generous pinch of sugar and 2-3 ladles of pasta water. Simmer for ~15min stirring occasionally. Season with salt and pepper. Remove from the heat.
  5. Preheat the oven to 190C.
  6. In an ovenproof dish, make alternate layers of tomato sauce, lasagne sheets and beef.
  7. Finish with the tomato sauce. Top with slices of mozzarella cheese. Bake for ~10 min.
