Beef And Rice Meatballs In Tomato Sauce

For Meatballs
  1. 3 tbsp half-cooked white rice
  2. 300-350 g minced beef
  3. 2 tbsp breadcrumbs
  4. 1/2 tsp ground cumin
  5. 1 tsp paprika
  6. salt and pepper to taste
  7. sunflower oil for frying
For Tomato Sauce
  1. 1 tbsp olive oil
  2. 1 celery stalk, finely chopped (optional)
  3. 1 large onion, finely chopped
  4. 3 garlic cloves, crushed
  5. 600 g passata
  6. 3 tbsp cooking cream
  7. 1 tsp sugar
  8. salt and pepper to taste
Instructions
  1. In a small sauce pan boil 1 cup water, add rice and simmer for 10-15 min until al dente. Drain and set aside to cool down.
  2. Meanwhile make sauce -- heat oil a pan, add celery, onions and crushed garlic cloves. Add a ladle of water and sweat over medium heat until soft.
  3. Stir in passata. Simmer for ~20 minutes.
  4. Meanwhile make meatballs -- combine the rice, minced beef, breadcrumbs, ground cumin and paprika. Season with salt and pepper. Taste and adjust accordingly.
  5. Form meatballs (2-3 cm in diameter).
  6. Heat the oil in a wok and fry the meatballs all over. Set aside.
  7. Stir in the cooking cream to the tomato sauce.
  8. Add sugar and season with salt and pepper. Taste and adjust accordingly. Remove from the heat.
  9. Transfer the meatballs to the tomato sauce and gently reheat.
