Ingredients
  1. 115 g plain flour
  2. 1/2 tsp baking powder
  3. 1/2 tsp ground cinnamon
  4. 1/4 bicarbonate of soda
  5. 1/4 tsp salt
  6. 45 g softened butter
  7. 2 tbsp caster sugar
  8. 1 medium ripe banana (~115 g), cut in chunks
  9. 1 egg, beaten
  10. 2 tbsp milk
  11. 1 tsp vanilla extract
For Brushing
  1. 30 g melted butter
  2. 1/2 tsp ground cinnamon
  3. 1 tbsp caster sugar
Instructions
  1. Preheat the oven to 170C.
  2. Combine dry ingredients - flour, baking powder, ground cinnamon, soda, and salt.
  3. In a mixer bowl cream together butter and sugar.
  4. Stir in banana chunks and egg.
  5. Stir in the dry ingredients.
  6. Stir in milk and vanilla extract. The batter should be very smooth.
  7. Prepare 6 small cupcake moulds, fill 3/4 of the mould with the batter and bake for 30 minutes.
  8. Meanwhile, melt the butter, stir in the ground cinnamon and sugar.
  9. Once the cupcakes are done, brush tops while they are hot. Let them cool completely.
Notes
  1. If banana isn't ripe, peel it and microwave for a few seconds to soften.
